Problems trying to install Superuser via update.zip

Hi Guys,
Does anyone know the correct structure and syntax of making an update.zip file to install Superuser.apk or indeed any other apk from custom recovery mode please?
I am having no luck getting any apk file to install via this method. The update.zip is recognised then instantly returns with completed however no files are ever installed.
Any pointers in the right direction will be greatly appreciated. Thanks
